Looking for the perfect side dish to accompany your dinner? Try my delicious baked miso aubergines. This recipe is suitable for vegans, coeliacs and people following a low calorie-low sugar diet. It is super simple to make and will definitely impress your family and dinner guests. Every time I invite people over for dinner I try to come up with a new dish that is easy to cook but looks like it required some serious culinary skills.

It is always a challenge to create something that can wow your guests , especially when it tastes amazing.

I often have my vegan friends over and try to make yummy meals that we can all enjoy together , without having to prepare separate dishes.

My miso aubergines always go down a treat and score me some real foodie points!

I have experimented with several different miso pastes but the winner is ......Itsu's.

In my opinion it has to be the tastiest on the market.





Itsu's miso paste is available to buy in small sachets which is very convenient to use and is a relatively cost effective ingredient to use in many sorts of dishes.

It is a great ingredient for vegan and gluten intolerant diets.

Add that to the facts that miso is rich in essential minerals and is a good source of B , E and K vitamins as well as folic acid.

By adding a zero calorie sweetener gives a delicious sweetness to the aubergines, the same taste as regular sugar but without those calories! I have found that various brands of sweetener can sometimes leave a slightly chemical after taste and after testing many brands I have a found my favourite called NKD Living.


Baked miso aubergines are great for serving as a starter , side dish or eaten as a light meal with salad or some rice!
