It's no secret that cauliflower and zucchini are two of many vegetables that have caused a stir in the cooking world, transforming some of the most loved dishes into healthy alternative meals. You must have come across cauliflower pizza or courgetti spaghetti before!
There are so many different ways you can swap veggies with main ingredients to create healthier meals! Yes, I know you're thinking that cauliflower pizza is no match for the real doughy pizza, and yes I do agree, they can not/should not be compared... But If you are a pizza lover like me and also trying to follow a healthier diet, having a cauliflower pizza once in a while will help keep cravings at bay and can also be super delicious. Now, enough pizza talk, today we're talking fritters. Cauliflower and zucchini fritters to be precise!
My veggie fritters are so simple to make and can be stored in the fridge for up to 5 days. They are great if you are following a lower-carb diet as they are made up of mainly courgette, cauliflower and buckwheat flour. The fritters are super satiating and can be eaten as a snack or enjoyed as a meal!

Cheese grater or food processor
Frying pan or Air fryer

The fritters taste so delicious with smashed avocado and topped with a poached egg. It makes a perfect healthy brunch.
