Pho is one of the most simple dishes to put together, its a quick and healthy dinner that tastes super delicious. This meal took under 10 minutes to make and is under 400 calories per portion.
I'm not someone who can handle spice, weirdly I love the flavour but can’t handle the heat (I go for plain chicken at Nandos). When I went to buy the ingredients for my pho I saw some mini red chillies and thought to myself “these are so small and cute they won’t be too hot”… I was very VERY wrong! I sliced them up and removed all the seeds and no word of a lie my knuckles (yes I know how weird that is) were burning for the remainder of the evening! Has anyone experienced this before?? So for future reference, I will no longer be going near chillies without full-on protection; gloves, goggles the whole works. I ended up sitting with my hands in a bowl of milk for an hour. But on the flip side, the pho was super delicious and will definitely be made again soon!
