Gluten-Free Chicken Katsu Curry
From being diagnosed as a coeliac from a young age I have been following a strict gluten-free diet.
This was not easy as a child growing up.
Some of my very favourite dishes were hard to come by in supermarkets.
Back then restaurants were simply a no-go.
For example before being diagnosed, Chicken Katsu curry was always a favourite of mine.
Unfortunately I never come across a gluten free katsu curry recipe and have gone many years without.
A good friend of mine Chloe and coincidentally an incredible chef came to the rescue by helping me to create all my favourite dishes GLUTEN-FREE.
We spent time creating and cooking up delicious recipes and I was able to snap some lovely images to share with you
The dishes we cooked were inspired by the limited availability in supermarkets and restaurants. Even though dietary requirements are now much more recognised than ever before.
The following Recipe was slightly adapted from Wagamama’s famous chicken katsu curry recipe and created to be gluten-free.
It is straight forward to follow and turned out super delicious, in fact I challenge you to a taste test to tell the difference.
As mentioned before, my all time favourite foodie substitute is using gluten free cornflakes as an alternative to breadcrumbs.
The taste is yummy , the texture amazing and gives the dish that delicious crunch.
Other ingredients such as GF flour and low salt soy sauce are easily available in all supermarkets and priced well.
