This is my go-to cookie recipe when I need a quick fix to cure my sugar craving. These cookies are so quick and easy to make, require ingredients you probably have in your cupboards already and of course are healthy and delicious.
These cookies are perfect to meal prep at the beginning of the week and to be eaten as a quick on the go breakfast or a tasty treat. They stay fresh for up to a week in an airtight container,
Here in the Uk, we have all gone back into lockdown, this is a scary and stressful time for everyone. I personally find myself reaching for the cookie jar as soon as I feel stressed or anxious so I wanted to make a healthier version to enjoy without the guilt.
Using oats in this recipe instead of flour leaves me feeling fueled and satiated for longer as oats are a slow-releasing carbohydrate. I find that eating one of these cookies hits the spot whereas I would typically eat two or three store-bought cookies and usually still feel hungry.
I have a real sweet tooth which is why I added the brown sugar replacement. Even though it is calorie-free I know some people choose to stay away from artificial sweeteners. If you are one of these people then simply use extra ripe bananas instead and the cookies will turn out sweet and delicious too!
Please note smarties are NOT gluten-free! If you are a Coeliac substitute for other chocolate like M&Ms or chocolate chips!
