Honey and Sesame Chicken Salad
If you've been following my blog long enough you'll know that I'm a converted salad lover. I eat tons of salads and always look for ways to jazz them up a little.
One of the reasons I love salads is they allow you to enjoy a large volume of food that fills you up for half of the calories as a regular meal. Plus they're packed with nutrients!
Whenever I make a salad I always add a protein to it, this is usually chicken or salmon.
I love using the chicken breast as its the leanest part of the chicken and when cooked right can be absolutely delicious. I've tried many different methods of cooking chicken which have often turned out dry or flavourless but have finally found the best formula that I will likely use forever!
My secret is marinating the chicken overnight! I know this isn't exactly a secret but I kept putting it off thinking it wouldn't make any difference... But trust me, it really does! A little tip to get the flavour really locked in is taking a toothpick or a sharp knife and poking several small holes into the chicken breast before marinating it. The longer the chicken is left marinating the more flavour it absorbs.
