Mango and coconut chia pudding
Chia pudding is one of my go-to breakfast meals or desserts. It's an absolute favourite of mine, first of all, it's so delicious! It is one of the easiest recipes to make and can be customised each time to be completely different and its high nutritional content keeps me feeling satiated for a really long time. My delicious recipe only has three main ingredients!
What is chia pudding?
Chia pudding is made by soaking chia seeds in milk or water overnight. The small seeds absorb the liquid and swell up making them soft and squishy which then can be used to make a thick and delicious pudding!
Benefits of Chia seeds
Firstly, Chia seeds are low in calorie so are great if you are trying to lose weight. They are a great source of Omega-3 fatty acids, high in protein and almost all the carbs in them are fibre. Chia seeds can be used in tons of different recipes like sprinkled over a salad or yoghurt, soaked overnight for a tasty breakfast pudding or blended with cocoa powder and turned into a healthy chocolate mousse!
