Protein mini pancakes

Pancake cereal has become the new trend, I decided I had to try them out for myself.

I'm not too sure why their called pancake cereal and not pancake nachos! These little protein pancakes were super simple to make and so delicious. Gluten-free and 25g protein - the perfect way to start the day.

This recipe makes the perfect amount for a filling meal. I usually make them for breakfast but they also make a perfect post-workout snack!

Toppings is where the fun begins, I used peanut butter, chocolate sauce, and fresh berries. But there endless yummy combos to try!
