Protein packed Chocolate Mousse

Chocolate mousse has always been a family classic! I've tried to recreate a lower calorie version that still tastes amazing and have finally created the perfect recipe! This chocolate mousse is high in protein and only needs a few ingredients to whip up.


130g Liquid egg whites or two large egg whites (At room temperature)

20g Dark chocolate (You can use any chocolate)

25g 0 calorie sweeter

1 tbsp Almond extract

1/4 tsp Xanthan gum

Firstly whip up your room temperature egg whites using an electric whisk. Start on a slow setting and gradually increase speed until the egg whites are fluffy and have formed stiff peaks.

Gradually add sweetener while continuing to whisk. Next, add the almond extract and xanthan gum and continue to whisk for around a minute.

Next, take your chocolate and place in a microwave-safe dish, save a small chunk of the chocolate to grate on top of the mousse at the end. Microwave until melted. You want to gently fold the melted chocolate into the whipped egg whites, mix from the bottom to the top in order not to deflate the egg whites.

Finally, leave in the fridge for three hours to set and then grate the remaining chocolate on top. The texture should be light and fluffy.
