Rose Meringue Cookies

These pretty pink meringue cookies are just 4 CALORIES EACH!!!

I have tried and tested this recipe around 20 times and have only recently managed to perfect it. I am finally ready to share it with you!


I have been trying to find a light snack that's sweet and delicious but low in calorie meaning I can snack on a whole bowl in one go! Lockdown has been very difficult for many people, Being stuck inside all day with little to do makes it tempting to eat, even when you're not hungry. Many of my friends and family have told me that they have been snacking out of boredom and are worried about the unhealthy effect this is having on their mind and body. This got me started on my quest to find the perfect low-calorie snack that's still really tasty! Meringue seemed like the perfect treat, simple to make and the ingredients could be easily converted into low-calorie alternatives.













Make sure not to open the oven door until the cookies are ready to be taken out (however tempting this may be!!) This usually takes around three hours. I Make the cookies before bed and let them cool overnight.

The cookies will have a light, crispy texture. They can be stored in an airtight container for up to 7 days. I hope this delicious recipe helps with the lockdown snacking!
