Looking for a sugar-free and keto-friendly dessert? Look no further!
Recently I invited my Aunt and her family over for dinner. My aunt is diabetic and follows a ketogenic diet which makes cooking for her a bit of a challenge. She also has a massive sweet tooth so often struggles to find desserts which are suitable for her to eat. I did a bit of research and decided on a delicious sugar-free pavlova dessert. I knew this would go down a treat for everyone and would mean we were all able to enjoy the same dessert rather than preparing a separate one exclusively for my aunt.
Sugar-free meringue pavlova
Meringue and Pavlovas are great desserts to make for anyone following a diet that restricts sugar intake (for example Diabetes, ketogenic diets or Low Gi diets) as they can easily be adapted and made using artificial sweeteners. I have tried many different zero calorie sugar replacements and often l don't like the chemical after taste it leaves. However, since discovering the brand NKDliving My baking game has stepped up massively! I use their products in most of my recipes and absolutely love them!
I've been wanting to make a sugar free pavlova for a long time and randomly came across a recipe for it on NKDlivings website! Their recipe is suitable for vegans as they use the liquid from chickpeas instead of egg whites. Their recipe inspired me to create a similar recipe yet its slightly different. When it comes to decoration I've discovered edible rose petals which make everything look super pretty! They smell incredible too. For this pavlova cake, I used edible rose petals, fresh fruit and a few dried flowers too (The dried flowers are not edible! Just makes the pavlova look extra pretty, so remember to remove these before serving.)
While the Pavlova is 100% sugar-free, make sure to read the ingredients in the ingredients for the Icing to be sure they are suitable for whatever dietary requirement you may have.
